It is meant for sourdough, but works with whole grain too! You can try it with your favorite bread recipe.
Fast Method:
-First, heat water to warm, add yeast and the sweetner. Let sit for several minutes while you mix the dry ingredients.
-Add all dry ingredients together except yeast mixture. Mix and cut in the butter using the food processor or kitchen aid.
-Mix all liquid ingredients into the dry ingredients. Pulse the processor or mix just as it turns into a ball. Stop mixing and let sit for 20 minutes.
-After 20 minutes, blend again for 45 seconds to 1 minute. The dough should be very elastic now and warm to the touch. If you do sourdough, it should be as thin as a window and should not break.
-Next, grease a pan and put oil on top of the dough and let sit for 2-5 hours or whatever the recipe recommends. I like this recipe below to rise for about 3-5 hours.
-After letting the dough rise, cook the bread in the oven per recipe guidelines.
Here is my bread machine recipe that worked really well with this technique:
Honey Grain Bread (from Oster Bread Machine Recipes)
Water 11-12 oz Butter 2 1/2 TBSP Honey 2 TBSP (I also use brown rice syrup)
Bread flour 2 1/2 cup Whole Wheat flour 1 ¼ cups Quick Oats 2/3 cup (I used oatbran) Salt 1 ¾ tsp Active dry yeast 2 ¼ tsp
Cook at 385 degrees for 20 minutes and prick it to make sure it is cooked on the inside.
